Each bottle is born from expert viticultural and winemaking knowledge, communicating the history of the place, the importance of the family and the quality of the product.
Ronco di Paolo is the selection of Petrucco Wines. These wines are named after the founder of the winery, Paolo Petrucco, and originate from the vineyards with better exposure and desired by the transflier Italo Balbo in the lands of his beloved wife, Countess Emanuela Florio. The selection consists of a Pignolo, a Merlot, a Refosco dal Peduncolo Rosso and the Bianco Cabas: the latter comes from a particular blend of white wines conceived by winemaker Flavio in 2015, and bears, at the behest of the Petrucco family itself, its name.
Ronco di Paolo wines have unique and inescapable characteristics that reflect confirmed quality, strong passion, explored innovation and connection with the territory. The red wines are born from small plots that feature old vines, consist of selected, better quality grapes and undergo aging in wood. Cabas is the result of innovation in winemaking techniques, the search for the right balance between four different varieties and the union of native and international grapes (Friulano, Chardonnay, Malvasia and Sauvignon).
Pairing Ronco di Paolo wines is an important key to achieving the best sensory experience during meals. Ronco di Paolo red wines are characterized by long aging periods that require dishes of greater gustatory and aromatic importance: fatty meats, braised meats, truffles and aged cheeses combine with the tannins of these wines giving new sensations. Red wines can also be meditation wines: a glass of Pignolo Ronco di Paolo paired with pieces of dark chocolate will reveal a flavor explosion, without requiring important accompanying dishes.
Cabas pairs well with first courses with white meat ragouts and grilled fish.
Storage of Ronco di Paolo wines requires special attention to maintain optimal quality over time. One crucial aspect is the temperature, which should be around 12-18°C. Temperature swings can damage the wine and ruin the integrity of the cork.
Bottle orientation is another important factor. Bottles should be stored horizontally to keep the cork moist, thus preventing it from drying out and compromising the bottle seal, accelerating oxidation of the wine.
Exposure direct sunlight or intense artificial lights and vibration are two elements to control. These can accelerate evolutionary processes, disturb aging and affect their development.
Humidity is another important factor. An environment that is too dry can cause corks to dry out, while excessive humidity can promote mold growth and damage the product. A humidity level around 60-70% is considered ideal.
