As dedicated connoisseurs and guardians of a historic winemaking heritage, we offer a sparkling wine that reflects our philosophy. Each glass tells the story of our commitment to offering a wine, an expression of our winery.

What is sparkling wine?

Sparkling wine is a type of wine characterized by its lively effervescence, that is, the bubbles that come naturally during its production. These bubbles are the result of a second fermentation that takes place in the bottle (classic method) or in the fermentation container (autoclave), during which sugar is transformed into alcohol and carbon dioxide, the latter of which gives the wine its bubbly uniqueness (perlage).

Sparkling wine is often associated with celebrations and special occasions, but it is also appreciated as an aperitif or in pairing with different dishes, thanks to its ability to balance flavors and add a touch of elegance at the time of consumption.

How to pair a sparkling wine

Pairing a sparkling wine with food is an art that relies on understanding the characteristics of the wine and how they can complement or contrast the flavors of the dish.

Generally, dry and more acidic sparkling wines, such as Brut, are versatile and can be paired with a wide range of dishes. These wines tend to balance rich and fatty flavors, making them excellent with appetizers, seafood, and some types of cheese. Their freshness also makes them ideal for cleansing the palate between bites.

Sparkling wine can be a great match for dishes that are difficult to pair with other types of wine, such as some appetizers or ethnic foods with intense flavors.

How to store a sparkling wine?

Storing sparkling wine requires special care to maintain its unique characteristics and effervescent quality. Fundamental is the environment in which it is stored: it should be cool, constant in terms of temperature, and away from sources of direct light and vibration. This is because changes in temperature and exposure to light can adversely affect the taste and aroma of the wine, while vibrations can disturb the natural sediment that forms in the wine, altering its clarity and taste.

Bottle orientation is another crucial aspect. It is recommended to store sparkling wine bottles in a horizontal position. This helps keep the cork moist, preventing it from drying out and compromising the bottle seal, which could lead to oxidation of the wine or loss of its bubbles.

The shelf life of sparkling wine varies according to type and quality.

Some sparkling wines are made to be consumed young, while others may benefit from extended aging. However, most sparkling wines do not gain complexity with age as some still wines do, so it is often recommended to enjoy them within a few years of purchase.
